Recipes ~ QIWEN’S DISH: ROASTED SALMON HEAD

Salmon heads are very nutritious, containing high levels of vitamin A, omega-3 fatty acids, iron, zinc and calcium. They are particularly good for your brain and for your skin.

Ingredients

One or two fresh salmon heads (if it is fresh, the fish’s eyes should appear clear and moist).
Rock Salt (ground)
Olive Oil
Ginger
Shallots
Optional: chopped garlic and your favourite vegetables.

Method

Wash and clean out all gills of the fresh salmon heads.

Cut the fish head in symmetrical halves if it is quite large.

Put the cut sides facing upward in an oven-able dish/plate, grind rock salt on top, add a touch of olive oil, also put some ginger and shallots on top (optionally put some chopped garlic pieces on top if you choose to use garlic in your cooking). You can choose to put some of your favourite vegetable slices under the fish heads.

Put the dish to an oven and heat it to 150-160°C for 20 minutes.

Turn the fish pieces over and roast it for approximately 10 minutes (for best results, place dish in middle rack of the oven).

Check whether it is cooked through by inserting the tip of a small knife to the thickest part of the fish meat.

Keep a close watch during cooking to prevent the dish from burning.

Once it is cooked, put some soy sauce and a bit more rock salt on top. Serve hot with lemon or lime wedges, rice and sides of your choice.

Recipe ~ GRILLED SALMON HEAD & THREADFIN FISH

I had planned to grill salmon fish head with Terriyaki sauce for dinner today.  I went to the mini market to get some stuff in the morning but forgot all about the  Terriyaki sauce!  So I made do with Agave Nectar and the outcome was just as good.  No one would have guessed that I used Agave Nectar instead of Terriyaki sauce.  Both have the same kind of sweetness.   Agave Nectar is healthier as it has  a low GI.

Here’s my grilled salmon head and grilled Ma Yau (threadfin fish) for dinner today.

I marinated the fish with sea salt, pepper, oil and some mixed Italian herbs in the morning.  The Agave Nectar was drizzled onto both sides of the fish about 10 minutes before I turned the heat off the oven.  I did not add the Agave Nectar earlier as I did not want the fish to turn blackish. I also tossed in some chopped onions onto the fish for added flavor, to be grilled for about 15 minutes.

Total grill time in the oven at 180 degrees Celsius = 30 minutes

Outcome of the fish = delish!  I was expecting the meat of the threadfin fish to be a tad rough but hey, surprise surprise!  It was NOT rough and dry at all!  In fact, it was very juicy and tender and so fresh!

Recipe ~ GRILLED SALMON FISH HEAD

Ingredient

  • Half Salmon fish Head
  • Teriyaki Sauce
  • Salt
  • Oil

Method
1) Wash clean the fish head, sprinkle with dash of salt.
2) Heat the oven for 5 min, grilled function 150 deg.
3) Oil the tray, place the fish head on top and brush with teriyaki sauce.
4) Grilled each side of the fish head for 5 min. Brush or dip the whole fish head into the teriyaki sauce before turning to grill the other side.

I couldn’t get my mind off the taste of the delicious teriyaki salmon fish head after we have at JB Jap restaurant. There is no intention for me to get a fish head today but I heard a lady asking for salmon fish head from the fish monger and that give strike me to get one for the kids too. The fish monger only charge all his customers for $5 each salmon head. I requested him to chop the head into half for me.

This is a simple and quick fish dishes for family. it only take about 10 min to grill and 3 min to prepare everything. As for the Teriyaki sauce, u can always get off the shelf from the supermarket.

Recipe ~ GRILLED SALMON HEAD WITH SALT AND BLACK PEPPER (鹽燒三文魚頭)

This is an appetizer dish that is served in most Japanese Cuisine Restaurant. After rubbing the black pepper and salt onto the salmon head, grilled the salmon head right away or the dish will be too salty.

Ingredients:

  • 1 Salmon Head
  • 2 tsp Grounded Black Pepper
  • 1 tsp Coarse Salt

Preparations:

  1. Preheat oven to 400 degree F.
  2. In a small bowl, mixed black pepper and coarse salt.
  3. Rub black pepper and salt evenly on the dried salmon head.
  4. Place salmon head on baking pan. Baked for 20 to 25 minutes.

Recipe ~ GRILLED SALMON HEAD WITH GARLIC PESTO (香草蒜蓉燒三文魚頭)

Ingredients:
Salmon Head (halved) 1
Lemon (cut into wedges) 1

Method:

  1. Clean, rinse and wipe dry salmon head halves
  2. Using a pestle and mortar, blend garlic, parsley, black peppercorn and sea salt together, add Japanese sake, lemon juice and olive oil to mix into garlic pesto marinade,
  3. Rub garlic pesto marinade over salmon head halves and set aside for 10 minutes
  4. Place salmon head halves on a rack and grill under medium heat, glazing with remaining marinade and grill until both sides are golden in colour. Remove to plate, garnish with lemon wedges and serve

Seasoning: Garlic Pesto Marinade
Chopped garlic 1  1/2 tbsp
Chopped parsley 1 1/2 tbsp
Crushed black peppercorn 1/2 tbsp
Sea salt 1 1/2 tbsp
Japanese sake 1 tbsp
Lemon juice 1 tbsp
Olive oil 2 tbsp
